This 18 years old Daiginjo, slowly matured at a very low temperature in the bottle, is made with Yamadanishiki rice, often called the king of rice in the sake world. The initial sake was made to be submitted to the most prestigious sake competition of the year in Japan called the Kanpyokai, so this sake is Kikunotsukasa Brewery's submission sake 18 years ago. Deceptively smooth for a sake it's age, there are only slight hints of matured notes such as caramel, so it is highly recommended for those usually not used to such bold flavours, but looking for a Daiginjo with depth and complexity that can only be produced with patience.
