“It’s a good clean vintage in 2022,” Australian-born winemaker Marc Cameron tells me as we taste through his range of wines. “The heat burnt down a lot of total acidity, which is lower than average with slightly above normal levels of alcohol. The pH’s are good, more balanced than even perhaps the 2020s, considering it comes from one of the hottest years in history. We started picking on August 31 for 10 to 12 days to keep the acidity, the yields were good, mostly around 58hL/ha, though Mont de Milieu was only 33hL/ha due to a little bit of frost. It was difficult to get pickers in 2022, and it will be the same this year. You have to start picking early in the morning, at around 7am. We’re getting more cooling tanks for future vintages. The Grand Crus and half the Premier Crus are picked by hand, the others picked by machine. The wines are better with the harvesting machine for the Petit Chablis and Chablis as we can pick at the right time in 12 days instead of three weeks. When it’s raining, we can stop.” Like their neighbor, Christian Moreau, I feel Servin is a rather under-estimated Chablis producer. I have experienced first-hand plenty of mature bottles that age better than you might suppose. Their 2022s are steered with Cameron’s touch as a winemaker, with some entry-level cuvées such as the Vieilles Vignes “Massale” well worth hunting down. - By Neal Martin on July 2023

Terroir
Blanchot sits on the right bank of the Serein River, one of Chablis’ smaller and often more understated Grand Cru sites, yet ranked among the most elegant. The vines are planted on Kimmeridgian limestone-marl soils rich in fossilised oyster shells and fine clay, which deliver the crystalline minerality and saline edge characteristic of the finest Chablis. Domaine Servin’s parcel (≈0.91 ha) is worked with precision, vines now around four decades old, producing small concentrated berries that capture the site’s quiet power and finesse.

Winemaking & Technical Notes
For the 2022 vintage, Domaine Servin vinified the Blanchot entirely in stainless steel tanks (no new oak) to maintain clarity and purity of terroir. The growing season allowed for good maturity while retaining freshness and tension—important for Grand Cru Chablis. This  version especially embodies the estate’s philosophy of letting the vineyard speak. Yield was controlled, grapes hand-harvested, and maturation occurred under lees to give subtle texture without obscuring the site’s crystalline character.

Tasting Notes
In the glass, the 2022 Blanchot offers a pale gold hue with fine, luminous clarity. The nose reveals fresh citrus peel (lemon, lime), white orchard fruit (pear, green apple), chalk dust, oyster shell and a whisper of white flower (acacia/honeysuckle). On the palate, the wine is medium-to-full in body, richly textured yet lithe. A core of white peach and pear skin is counter-balanced by vibrant acidity and a pronounced mineral and saline spine. The mid-palate broadens gently, delivering wet-stone minerality, flint and a subtle herbal note. The finish is long, precise, slightly firm, and resonant with citrus zest and stony persistence—this is a Grand Cru built for both immediate pleasure and graceful ageing.

Food Pairing & Service
Serve chilled at around 10–12 °C (50–54 °F) using a white-wine glass with moderate bowl size to allow the aromatics to emerge. Given its structure and Finesse, this wine pairs beautifully with refined seafood such as oysters on the half-shell, poached turbot with beurre blanc, or grilled sea bass with lemon-thyme butter. It also stands up beautifully to richer white-meat dishes like veal tenderloin in a light cream-and-mushroom sauce, or even truffled risotto with shaved pecorino. For cheese, opt for aged Comté or a subtle Époisses to match the wine’s mineral energy and texture. This 2022 Blanchot is approachable now but will reward some cellaring (5-10+ years) for further depth and nuance.
