So, as we said, the Blue Weber Agave takes seven whole years to mature, and once it’s ready to be harvested, a brave Jimador wielding a Coa de Jima (a hoe) chops off its spiky leaves, and out comes the piña. These heart-shaped gems are then subjected to steamy cooking, a period of rest, a cooling off, and finally a crushing to extract that sweet, sweet Agave juice. Their Blanco Mezcal is absolutely delicious, carrying a silky and nuanced body that's packed with earthy aromas and subtle hints of apple vinegar and dried lemon zest.
