Bies Whiskey Polish Wine Cask Finish is a project of Whisky Embassy and Ima Distillery. The aim of the project is to "use" barrels from Polish wines in the whiskey finishing process.

The whiskey presented is a Chardonnay edition for which we selected a 5-year-old distillate from Northern Ireland. We finished the whiskey for 6 months in a Slavonian oak barrel after Chardonnay wine from a renowned Polish vineyard.
We obtained a product with an exceptional character, which we bottled at an alcohol content of 48%.

We named the whiskey Bies – a nod to Slavic mythology. The moth on the label is a symbol of the connection of two worlds – Ireland and Poland, two countries with great distilling traditions.
The whiskey presented is the second bottling. The number of bottles is limited – only 300 pcs.

Whiskey awarded the title of Best Festival Whiskey during the first edition of the Poznań Whiskey Festival in a blind test.

Tasting Notes

Nose : delicate, malty, sweet, fresh fruit, yeast dough, vanilla.
Palate : distinctive, slightly peppery, fruity, sweet, grapes, oak, citrus, vanilla.
Finish : long, warming, fruit, grapes, lemon peel, vanilla, oak.
