The GlenAllachie Distillery's 4-year-old single malt is a unique release for several reasons. Firstly, it is the first peated expression and the first distillate produced since Billy Walker took ownership. Secondly, the distillate underwent a lengthy fermentation of 160 hours, which has resulted in an ester-rich and fruity spirit. The maturation process was carried out in former Rye and Bourbon barrels, as well as some virgin oak casks. The spirit was made with mainland peat, which has lent it a lovely amber hue and a distinctively smoky yet sweet flavor profile. Expect notes of sweet cinnamon apples alongside smoldering oak in every sip.
