In this miso workshop, we will make traditional Japanese miso paste using organic ingredients and artisanal koji. You will gain insights into the fermentation processes behind classic soybean paste and koji, exploring their distinct flavors and health benefits. As part of this experience, everyone will receive a jar of self-made organic miso paste to continue maturing at home.

Markus Shimizu, the owner of mimi ferments, will lead this course and share his extensive experience with you, offering tips and tricks along the way. Additionally, you will receive a helpful handout.

Our workshop will commence with an Amazake smoothie, followed by a tasting of various homemade organic miso variations. We will finish the workshop with a delightful bowl of fragrant homemade miso soup and serve some small bites prepared using our organic soybean pastes. Drinks will be provided, too!

What is Miso?

Miso, the nutritious fermented soybean paste, has always held a significant role in Japanese culture and cuisine. In Japan, the fermentation of soybeans, rice, or grains has given rise to a wide array of local variations, family recipes, and unique culinary applications, resulting in a diverse range of flavors and colors for miso pastes. What unites them all, though, is the use of koji as a starter culture and a common method for the fermentation process.

As we prepare food and ferments, it's crucial for us to have an accurate participant count for our workshops. Koji preparation is typically done about a week in advance, so we cannot accommodate cancellations within 10 days of the workshop. If you are unable to attend, you are welcome to suggest a replacement participant.
