The Shapton Kuromaku #2000 is used to refine an already sharp edge. It removes the scratch pattern left by a #1000 stone and smooths the very tip of the edge.
A #1000 grit stone produces a sharp and practical working edge. Moving to #2000 reduces the depth of the scratches and evens out the edge further. The result is a cleaner cut and improved cutting control, especially in kitchen use where precision matters.
The finer surface also strengthens the edge by removing small irregularities left by coarser stones. This helps create a sharp but stable edge suitable for regular use.
